Longing for Warmer Weather

I've hit a bit of a block....I haven't been motivated to write...It's the cold. The darkness. It's the getting up early, going to work, and by the time I'm home it's dark, cold, and all I want to do is crawl in bed and sleep.
I've been craving one of my favorite spring/summer meals lately. I remember the first time I ever made it was the night we bought our pop-up camper. We were so excited. I cooked the Greek chicken pasta and we ate dinner in our new " vacation home." hehehe....Little did I know at that time that 2 weeks later I would find out I was pregnant with our sweet baby Easton. We went on one trip in that pop-up. It was a fun trip-filled with great memories. Shortly after we found out our big news though we sold the pop-up in a bit of a panicked response of the life changing events that were soon going to take place.

Tonight I made the Greek chicken pasta and I thought I would share it with you.


Ingredients:
1 or so pounds of chicken breast
Greek Seasoning
Orzo pasta cooked and drained
Juice of one lemon, 1T of olive oil, 1 T of Dijon mustard, & 4 T of honey
1 cucumber chopped
1 can of olives
Some cherry tomatoes. I personally don't like tomatoes so I put just enough to suit my husband
chopped red onion-half a cup maybe....
Crumbled feta cheese


Season the chicken with greek seasoning. Saute in a non-stick pan until done. Slice thin.
In a bowl, combine lemon juice, olive oil, mustard, and honey.
Mix together cooked chicken, pasta, veggies, and cheese. Toss with lemon dressing.
It is delicious and a favorite in our household. I hope you enjoy!

    And, I'm right with you on the warm weather. Of course, I would settle for just the sun right now. It's been so gray here lately!

  6. Mmmm... I love food with a greek flair. I am ready for some warmer weather too - we got up to about 50 degrees this afternoon and I took the kids to the park. I wish it would stay, but it's supposed to rain tomorrow :(
